Has it ever been done or is it even possible for fps multiplayer games like:

AFAIK bots for Quake 1 are available:
https://www.quakewiki.net/quake-1-bots/

It's very likely that these will work with DOS version of Quake 1 as Quake 1 uses a platform-independent interpreted language for game logic.

I'm not sure about other DOS-based games.

Played maybe half of your list (as shareware in the 90's). Hexen, Heretic, Duke Nukem 3D, Rise of the Triad all had their source code released about 20 years ago so they should be possible to do bots for deathmatch or single player. A wiki search says Blood source code is still protected so maybe that game can't be legally modified. The rest of your list don't ring a bell but maybe I have forgotten things from 20 years ago.
